Stuffed bell peppers courtesy mom. Preheat oven to 450 degrees. Boil potatoes, keep aside. In a pan, sautée finely chopped onions, green chilli, ginger and garlic. Add cumin powder, garam masala powder and coriander powder and salt to taste. Cook until translucent. Add boiled, mashed potatoes. Cook for 10 minutes. Keep aside to cool. Prep the bell peppers by cutting off their tops (dont discard) and clearing the insides of any seeds. Line these up on a jellybean tray. Stuff hollowed bell peppers with the cooked potato mix. Cover with the capsicum tops just like lids. Brush the bell peppers with some olive oil (you dont need much). Put tray in oven and bake until you see the bell peppers skin softening and getting dark brown patches (about 15 minutes depending on your oven). Serve with garmagaram rotis.
