Sunday, September 14: Internal Heat I am sitting with Bonnie at a cooking demonstration. Two professional chefs were challenged to prepare a dish using ingredients chosen by the audience. The four were chicken, jalapeno peppers, cauliflower, and garlic. What caught my attention was a side comment made by one chef about what he called internal heat. If I am cooking meat and want a medium-done steak, I should take it off the heat prior to reaching the desired internal temperature. The meat will continue cooking. Another interesting point he made - one that I already knew - was that the meat fibers tighten up when subjected to heat. In order for the meat to reach that perfect point, the fibers need to relax and release the juices. Eating a steak right off the Grill, therefore, is not recommended. When Im subjected to the heat of the world, stressed, and anxious about whats going on in my life, I need to be removed from the heat temporarily in order for my insides to relax. If I dont remove myself from the heat, Ill eventually become overcooked, wound tight like a spring, and unattractive and useless to those around me. In addition, the joy that is within will remain crunched up and unable to release. I dont want to be like this. There will always be too much heat in my life. As one who is fully engaged with others and not planning to move to a deserted island any time soon, I need time away, time alone, that down time that allows me to slowly release inside and remain relaxed under fire.
