Sweet potato protein pancakes. Made these little gems this morning. I usually have pumpkin but only had sweet potato purée in my pantry. Work with what you have! My first batch was good, but I tweaked the ingredients and my second batch was great! Here is what I used: 1/2 cup oragnic regular cut oats 1/2 cup almond flour 1 whole egg and 1 egg white (i buy local eggs that are only $2.99/dozen) 1 tsp of aluminum free baking powder 1 tsp cinnamon 1/2 cup of organic sweet potato puree (BPA free can) 1 tbsp organic cane sugar 1 scoop IsaPro (Isagenix whey protein from grass fed New Zealand dairy cows) 1 pinch of sea salt. 2 Tbsp. melted coconut butter mix in food processor and put on griddle. each of my kids likes their different...1 with coconut oil and honey, 1 with just maple syrup and one with jelly. =) They were a hit! =) I encourage you to make a small batch and try them out...then if you like them, double or triple the batch and make a bunch! keep some in fridge and some in freezer. When you want to heat them up, pop them in the toaster and enjoy!
