TGIF! Here are a couple recipes for your St Pattys Day Weekend Inspiration: MATCHA GREEN TEA COCONUT PANCAKES Made with coconut flour, matcha powder, buttermilk, and egg whites, these pancakes are winning the healthy flapjack game. Serve up a stack of these bad boys topped with Greek yogurt, crunchy pistachios, and a drizzle of honey. INGREDIENTS (Serves 1) ⅓ cup coconut flour 1 tbsp Matcha Green Tea Powder ¼ tsp baking powder 6 egg whites (¾ cup) ½ cup buttermilk 1 tbsp honey (or maple syrup, or agave nectar) Garnish 2 tbsp 0% fat plain greek yogurt 1 tbsp cooked or canned Black Soy Beans 1 tbsp chopped pistachio 1 tbsp liquid honey INSTRUCTIONS Combine all ingredients in a small food processor (or mixing bowl) and blend until well combined. Coat a non stick pan with cooking spray and heat over medium-high heat. When pan is hot enough, slowly ladle about ¼ of a cup per pancake and cook until tops are covered with bubbles and edges look cooked. Very delicately flip the pancakes and cook until second side is golden then transfer to low temp oven to keep them warm while you cook the remaining pancakes. Garnish with dollop of plain yogurt, chopped pistachio, cooked black beans and drizzle of honey. Better yet, that matcha powder is a great (natural) way to turn just about anything green. Is this the new St. Patrick’s Day celebration staple? We think so. 2 cups finely ground almond flour 1/2 tsp salt 1/2 tsp baking soda 2 tbs matcha green tea powder 2 eggs 1/4 cup honey 1/4 cup ghee (or oil of your choice) Heat oven to 350 F. Toss all the ingredients into a blender. (Doing this by hand? Mix dry ingredients and wet ingredients in separate bowls. Slowly pour and mix the wet ingredients into the dry ingredients, and blend well.) Pour into lined (or non-stick) mini muffin tins. Sprinkle sliced almonds on top.
