TIL via Alvin Pang: Hokkien noodles were popularised by a Hainanese guy who used to work as a galley cook on merchant ships. Thats partly why the dish is a mishmash of different things. His stall was in Rochor, then a predominantly Hokkien area, and his assistants and customers were mostly Hokkien so it became associated with them. His descendent still sells Hainan prawn noodles in the Beach Road hawker centre basement. Beach Road hawker centre is my lunch place. Must find out which stall is this.
