TRUFFLES (aka kid-friendly rum balls) *Super simple to whip up...even the kids can do this one - Its NO cook/bake! Ingredients (1): 1 packet Marie biscuits (but arrowroot and similar work just fine) coconut - 1/4 cup plus extra spread across the base of a baking tray or container (I think desicated works better) Cocoa - about a tablespoon (whatever youve got, but this is where the flavour is so choose wisely...Ive even grated real chocolate for a lux-version) 1 tin condensed milk (I use skim but type doesnt matter) Method: (2) Break up biscuits to breadcrumb point - my mum always gave us kids a big bowl and the end of the rolling pin to bash to a pulp....but a processor works too, just pulse it as its nice to still have some bits) -Add condensed milk, spoonful of cocoa (less or more depending on how chocolatey you want it) and 1/4 cup coconut (3) mix until it comes together...add a little extra coconut if its really wet, hut you want it sticky-ish - grab small bite sized portions (Im never too precious here, some people only want a small ball, others like the big ones) and drop onto tray covered in coconut (your fingers will be covered in the mix - roll the balls till you Start sticking, wash your hands and do the coconut bit then repeat) (4) cover balls in coconut and roll a little more to get the right shape (centre pic) container full of goodness into fridge....if you manage to hide it well, it should last 7-10 days, but they are super more-ish ;-)
