TURKEY STUFFED PEPPER ....1 pound lean ground turkey, 1garlic minced,1/4 onion minced, 1 tsp garlic powder, 1 tsp cumin, 3 large pepper, 1 cup fat free chicken broth, 1/4 cup tomato sauce, 1 1/2 quinoa or brown rice, olive oil spray, 1/4 reduced fat shredded cheese....heat oven 400, spray a little olive oil. Spray in a med size sauté pan and heat on med flame,add onion, garlic and cilantro to pan. Sauté about 2 min & add ground turkey. Season with salt, garlic powder & cumin and brown meat for serval minutes..until meat is completely cooked through.add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, I used veggie broth, mix well until simmer on low for about 5 minutes...bine cooked quinoa or brown rice to meat together. Cut pepper in half lengthwise & place in a baking dish stuff as much as the mixer in each 1/2 as you can....pour the other 1/2 of the broth in the bottom of the baking dish.....topped with the shredded cheese...cover with aluminum foil & bake for 35 minutes...184.7 calorie, 2.3 g Fat, 20.8g Protein, 20 .2 g carb & 1.6 Fiber.....
