Tagliatelle con gli Stridoli (Tagliatelle with Bladder Campion) Recipe from San Marino Origin: San Marino Period: Traditional This is a traditional Sammarinese (from San Marino) recipe for a classic dish of home-made tagliatelle pasta served with a sauce of bladder campion and bacon in a tomato sauce and white wine base. Ingredients: For the Pasta: 6 eggs 600g white flour pinch of salt For the Sauce: 300g bladder campion (Silene vulgaris) 600g tomato sauce (passata) 50g bacon, chopped 1 garlic clove, chopped 1 onion, chopped 120ml dry white wine olive oil sea salt, to taste Celtnet recipes chicken recipe divider Tagliatelle con gli Stridoli (Tagliatelle with Bladder Campion) Preparation: Method: Begin with the pasta. Sift together the flour and salt in a bowl. Form a well in the centre and break in the eggs. Combine the ingredients to form a dough then turn out onto a floured work surface and roll out thinly. Cut into strips of regular width with a sharp knife (the tagliatelle) then set aside to dry slightly for 30 minutes. In the meantime, prepare the bladder campion sauce. Heat a little olive oil in a pan then add the bacon, garlic and onion. Fry for about 5 minutes, or until softened then add the white wine. Bring to a boil and continue cooking until almost all the wine has evaporated. At this point add the bladder campion and the passata. Bring to a boil, season to taste with salt then reduce to a simmer and cook for about 12 minutes. In the meantime, bring a pan of salted water to a boil, add the tagliatelle and cook for about 4 minutes, or until al dente. Drain then add to the pan with the bladder campion sauce and stir to combine. Turn into a bowl and serve accompanied by grated Parmesan cheese.
