Talking about fish today - there is something special about a fresh piece of fish cooked and enjoyed with a salad or the ultimate crunchy chips Try some beer battered fish, served as soon as its cooked 4 hake fillets (200g each), salt and pepper Enough oil for deep frying 11/2 cups flour plus extra for dusting 1 tsp baking powder, 1 bottle beer ( 365ml) Lemon wedges Season fish well, heat at least 6cm oil in a 30cm saucepan. If you have an electric deep fryer use according to instructions. Mix Flour, baking powder and salt together in a bowl. Add beer, whisking well. Batter should be of a coating consistency (not too thick) Place a little flour on a large plate. Press both sides of fish firmly into flour, then shake off excess. Hold fish by tail end. Slowly slide into pan or fryer, so batter cooks before reaching the bottom of pan to prevent sticking. Fry until fish is cooked through. Remove and drain on kitchen Paper, season lightly and serve with lemon wedges.
