Tasting the Trade Wind Salumi in Kilauea, Kauai. Withe Thomas, the charcutier, Gary the pork feeder and farm butcher. On the plate were three salami, one peperoni, a prosciutto, a speck and a coppa, all passed muster, bravo. I was made to believe that it was impossible to make proper salumi under the tropics... we have to change our mind. Then the crazy idea that works well, using ladys nylon stockings as a casing.
