Thank you for all those who attended our meeting last night! Im sure you all left with a few tips about cooking and fall foods, and stomachs full of delicious pumpkin mug cake. Below are the tips and recipes explained in our meeting! ======================================== Here are some tips explained in the meeting! Buy foods in season because they will be cheaper and taste better! Brining white meats like chicken breast or pork loin can keep the meat a lot more moist and not overcook during the cooking process. Procedure: Soak meat overnight in a 1.5-3% salt solution (1-2Tbs to 1quart/liter of water) add flavoring if desired (sugar, spices, herbs...) Taking time to caramelize foods can bring out flavor and make a dish more exciting (ie onions) Roasting squashes is the easiest way to cook it. Turn oven to 400F, cut the squash in half, toss with salt&pepper (optional), rub with oil, put cut side down, skin side up on baking sheet and bake til fork tender (about 30-50 minutes depending on size) Think about flavor pairings like apples, onions and mustard! the Flavor Bible or Culinary Artistry are great books to have! ============================================= Here are the recipes described in the meeting! https://docs.google/document/d/1rHR4HObmjZEFx6bfYmvJkMmxzqRtJtZ9CgmxMFkTzCY/edit?usp=sharing
