The base recipe is for one person. I modify it to feed my household. 3/4 cup cooked quinoa. 1/2 medium red bell pepper, finely chopped. 4 tsp flaxseed ( I grind mine in the blender so it digests better). 1 egg white. sea salt and black pepper to taste. I also throw in some Chia seeds, I mean, why not? Combine all of it. It says to form into balls and make paddies out of them. I use the top of a 1 cup mason jar. It forms them nicely and they are easy to pop out. A few minutes on each side in a skillet and they are done. Keep em warm while you throw the spinach in the skillet (I use garlic, and a bit of evoo.) Then serve over spinach. So tasty too! My son loves them. So does my husband. (This isnt my recipe.
