The bestest brownies. Easy and so very moreish. 200g dark chocolate, (I find the supermarket own brand, which is cheaper also has the highest cocoa content) 175g butter (must be real butter) 325g caster sugar 130g plain flour 3 eggs 33 x 23 x 5cm greased and floured baking tray. Preheat oven to 170C (325F), gas mask 3. Put chocolate and butter in heatproof dish over pot of simmering water. Leave until melted and smooth. I use a pyrex dish with handles to sit on the edge of the pot, that stops it wobbling all over the place, also with this recipe its good if you have a bowl a bit bigger as you will add all the ingredients to the butter and chocolate. I put that on first and leave it while I get all my other ingredients together and grease my baking tray. Okay so youve done all that and the chocolate and butter doesnt seem to be smooth , stir it, it will soon become smooth. (I might add, I use a rubber spatula for stirring and mixing all the ingredients). Once the butter and chocolate is melted remove from heat and add caster sugar, stir until well mixed. Then add flour, stir until well mixed. Then add eggs (no you dont need to beat them or do anything with them first, just add them). Mix until thick and smooth. Oh and you dont need to wait for the chocolate/butter to cool down before adding the other ingredients. Dump the whole lot into your baking tray and bake for between 30 and 35 minutes. The top should be flaky and the centre still soft. I find 33 minutes does the trick for me. Try not to overbake as the edges become very hard. So time is up, take out of the oven and put on a cooling rack, still in the baking tray.. I find if you leave it to cool in the tray its easier to get out. Putting it on a cooling rack just helps it cool quicker. When cold cut into squares, about 12. Obviously you can make them bigger or smaller, but you are wasting your time as they get eaten very fast. Oh forgot to mention, you can also sprinkle icing sugar over the top to make them look a little fancier. Enjoy.
