The first word out of our camper Wendys mouth after tasting this cake was F#ck. It is that good. Great with coffee after dinner or for breakfast the next morning. Its a bunt, so theres plenty. Even after the weekend I had over half a cake to bring home to the husband- which is his new favorite cake too. What I did different: replaced the carrot with more apple. I had a load of apples sitting in my fruit bowl, so I used all apples. Also added, 1/2 teaspoon maple extract. I used heavy whipping cream in the glaze, instead of milk. Also, alternate glaze with pecans, or you will have a hard time getting them to stick.
