The only thing I could add to this would be not to drain on brown paper unless you know that it is safe - Use paper towels in stead - used to be that brown paper bags were made with whole trees and such but now they are made with recycled paper and that comes from everywhere - now I worked at Scott Paper Company here in Mobile as a draftsman and Ive seen first hand how the trees are brought into the plant, driven up on these huge platforms and locked down, then the whole truck loaded with logs is literally turned, nose first, straight up in the air and the logs slide off into a huge container full of water - they are soaked thoroughly for several days until that bark is saturated - then they are taken through a de-barker (grinders) that remove all the bark and dirt - the bark is sent one way to make coarse paper things such as brown paper bags (hence the color) and the stripped trees another for different uses... both bark and trees undergo the following process: they go through a chipper which chips the bark/tree into pieces then the chips go through a shredder - from there it is cooked... boiled and stewed until it is mush - then some of it goes on to make natural colored papers, the rest goes through a bleaching vat for those extra white paper products... and then they all go onto a belt and are dried and then compacted into thick 1 or so, long belts that are then turned into rolls - this is stored and used to make the different types of paper... some of these rolls are sold to paper companies that make whatever they want with them... OK, the point Im trying to make here is that paper is clean - but recycled paper is not, or so the Chefs on TV say it isnt - and Ive read it in more than one of my cookbooks... Sorry, folks, I just dont know how to pass on information without giving and education on the subject ... Im a mess...
