There is that one time where you realise you havent done your shopping and all the meat has run out, so what do you do to make a quick meal? Boil some eggs and throw in in a vegetable, thats what you do šŸ˜‰ = šŸ†+šŸ³ Aubergine & Egg Bhuna Recipe (Takes less than 30 mins to cook & prep) INGREDIENTS: Oil 2 small onion, finely chopped/blended 1 tablespoon mild curry powder Pinch of chillie powder 1 eggplant, cut into thick. rectangle strips 1 tablespoon canned chopped tomatoes Coriander leaves, roughly chopped 2-3 green chillies Salt to taste METHOD: 1) Boil egg until hard, wait to cool, peel shell 2) wash and cut aubergine into thick rectangle strips 3) Heat oil in medium heat, add onion until caramelised (I use a mini blender and blend onion- quicker to make a meal) or until soft. Add curry powder & salt,stirring for 2-3 minutes or until aromatic. 4) Add aubergine, sautĆ© in Onion mix and cook until it starts softening. 5) Add the hard boiled eggs in the mix, take care not to burn, cook for 1-2 mins in low heat. Add 1 tablespoon of ripe canned tomato sauce and add a little bit of water if you like bhuna style or more water to make it into a curry.
