Things Utah can do right now #1: A lot of discussion in Utah politics centers around the relationship between federal and state jurisdiction and the many difficulties posed by those conflicts. Those things are important, and we need to pay attention to them and work toward a satisfactory resolution. But there are also many issues that are entirely internal to Utah, things that can be addressed by the state legislature and resolved without federal involvement. This is a series of comments addressing those areas – ways in which we can increase both individual and financial freedom for all Utahns, and create a thriving free society for everyone in this beautiful state. 1. Eliminate the sales tax on unprepared foods. In general, Libertarians prefer taxes on consumption rather than on productivity because we want to encourage accomplishment, and such a tax structure does tend toward equalization of obligation since those with higher incomes tend to spend more, and on higher priced items. In the case of fuel taxes, the higher payments correlate to higher use. Taxing uncooked foods, however, does tend to place a higher percentage of the tax burden on lower income families, since the cost of such items and the number of calories consumed does not increase proportionately as ones income increases. Repealing the sales tax on unprepared food will have an immediate impact on our lowest income families, increasing their food budget by 3%. Its not a lot of money per household, but we all know every little bit helps.
