This afternoon I cooked this chicken recipe to have during the week for salads or just as a snack. Heres the recipe, it was really easy ... 500 grams of free range chicken tenderloin About a cup of almond meal Fresh herbs (I used oregano, sage & parsley from my garden) Good pinch of sea salt Fresh black pepper 2 eggs (mine were beautiful free range from Nicole Johnstone) Coconut oil for cooking Mix the almond meal with the other ingredients Beat the eggs Dredge the chicken in the egg mixture then coat in the almond meal. Melt the coconut oil in a baking tray in the oven then place the chicken in the tray. Cook for approx 20 mins. Turn carefully once during cooking. Thats it! Just remember if your kids are primary school age that the almond meal is nut. Cheers...P
