This is awesome... When I was 23? 24? years old a restaurant I worked at got in potatoes that were just huge. The cooks complained but I thought they were great. I took a couple, baked them, cut them in half, scooped out most of the insides to create bowls, sprinkled spices and cheese in the bowls, baked those again just long enough to brown them....Made a thick, creamy soup from the scooped out stuff and served the soup in the bowls. It was an instant hit. Sadly we couldnt get any more of the huge potatoes. :(
