This is how they made a Caesar salad. They put some anchovy paste on the plate and then the vegetables. They used liquid nitrogen to freeze the homemade dressing and turned it into a powder that they sprinkled over the salad. When you would take a bite, the dressing would cool the salad and then melt in your mouth. It was an unbelievable experience. Everything was perfect! Well, Karen did pass out and miss the chicken course, but by the time I was finished eating both of our first dessert courses, she was feeling better.
