This is our favorite recipe for au gratin/scalloped potatoes. You can easily double it or triple if needed. Au Gratin/Scalloped Potatoes 4-6 potatoes, I usually use Russet or Yukon Golds 3 Tbsp. butter 3 Tbsp. flour 1 1/2 - 2 cups milk 2 cups shredded cheese, reserve 1/2 cup Preheat oven to 375*. In a small sauce pan, melt butter over low heat. Mix in the flour and stir until incorporated. Add the milk and stir well with a whisk. Continue to cook sauce on low heat until it boils, stirring occasionally with a whisk. Remove pan from heat and add 1 1/2 cups of cheese. Stir well until all the cheese is melted and the sauce is smooth. Spread half of the thinly sliced potatoes in an 9×9″ baking pan that has been sprayed with non-stick cooking spray. Sprinkle generously with salt, pepper and garlic powder. Repeat with the rest of the potatoes, more salt, pepper and garlic powder and cheese sauce. Bake for about 45 minutes; sprinkle with remaining 1/2 cup of cheese and cook for an additional 15 minutes. Makes 6 servings.
