Red Velvet Cookies Red Velvet Cookies with Cream Cheese center Makes about 22 small cookies . 1/2 cup unsalted butter 1/3 cup sugar 1/4 cup brown sugar 1 egg 1 teaspoon vanilla 1 Tablespoon red food coloring 1 cup all purpose flour 1 cup white whole wheat flour 1 teaspoon baking soda 1/4 teaspoon salt 1/3 cup cocoa powder 1 block Neufchatel or reduced fat cream cheese, softened Enough buttermilk or sour cream to whip with cream cheese . Preheat oven to 375ºF. . Cream butter and sugars together until fluffy and well-combined. . Beat in egg and vanilla, then beat in food coloring. . Sift flours, baking soda, salt, and cocoa powder together, then add to butter mixture and mix until just combined. If you have time chill the dough, and return to fridge between using the dough. . Blend cream cheese & buttermilk/sour cream until soft peaks form. you can add red coloring to this to swirl or uniform red, or sprinkle with colored sugar. . Portion out by spoonsful onto cookie sheet. Make a small indentation & put a dab of cream cheese mixture in center and bake 10-12 minutes. Cool on cookie sheets. >>> .
