This red, purple edible Chrysanthemum dish, Kakinomoto, has been enjoyed since the beginning of the Edo period in Niigata and Yamagata. It is an essential food for the locals during the Autumn seasons. The dish is prepared by boiling the Chrysanthemum petals and drizzle with Vinegar. It is said that Anthocyanin (a pigment responsible for the red, purple and blue colours of many fruits, vegetables, cereal grains and flowers) could reduce the effects of aging and stress-related diseases.
