This week I got organic green lemons from Junichi Nishida fruit farm and salt from the Salt Farm both from Kumamoto Prefecture. With those two ingredients I prepared Preserved lemons the traditional way they do it in Morocco. This is the recipe taught by a great woman Chef when I was in Marrakesh for the shooting of my book about the lifestyle in that beautiful city. I plan to have a talk show with a demonstration about this in Kumamoto on the 20th of November. I will show how to realize this simple recipe and also I will do a Tajine using preserved lemons
