This weeks recipe is our Moms Pizzelle recipe. If youre lucky, you might even spot her in the store making them! Match a pizzelle with a classic after-dinner cordial like Sambuca or Marie Brizard to enhance the buttery anise flavor! Or if you really want to live on the edge, dip them in chocolate hazelnut spread, or fill them with ice cream for a tasty ice cream sandwich! Ingredients 6 eggs 3/4 c. sugar Pinch of salt 1 tsp. pure anise oil 3/4 c. oil 2 1/2 c. flour 2 1/2 tsp. baking powder Beat eggs with electric mixer; add sugar and oil and anise oil. Sift flour, baking powder and salt. Slowly add to egg mixture. Use electric pizzelle iron. Drop batter by the teaspoon onto center of each cookie section. Close lid and allow to cook 45 to 60 seconds until lightly brown. Cool on wire racks or on paper towels. When completely cooled, store in tins.
