Thursday 6-20-13 MISCELLANEOUS THURSDAY - special request for Caren St. Clair COPYCAT/CLONE OLIVE GARDEN MINESTRONE SOUP Cook 1/2 c chopped onion; 1/4 c chopped zucchini; 1/4 c cut up Italian green beans; 1/4 c chopped celery; and 2 minced cloves garlic in 2 T olive oil for 5 min, until onions are translucent. Add 4 c VEGETABLE BROTH; 15 oz can dark red kidney beans, rinsed & drained; 15 oz can cannellini beans, rinsed & drained; 1/2 of 14 oz can diced tomatoes; 1/2 c grated carrot; 1 t oregano; 1 t salt; 1/2 t pepper; 1/2 t basil; 1/4 t thyme; and 1 1/2 c hot water. Bring to a boil, then simmer 20 min. Add 3 c washed and stemmed fresh spinach and 1/3 c small shell pasta. Cook 20 more min. NT
