Time for The Twelve Days of Hipcooks DAY TWO - brought to you by our lovely Christina in San Diego. Get these DIYers done early and have gifts ready for the month! Mulling Spice Packets - a great DIY gift! Last year I was inspired to give DIY food gifts to family, friends and my lovely Hipcooks assistants. An article I read in Food & Wine inspired me to make these easy and impressive gifts. I used the spices at last years Hipcooks SD Holiday Party and at my familys New Years party to infuse apple cider and wine. Happy Holidays! This recipe makes ONE pack of spices, but can easily be multiplied (I made 30)! One spice pack will flavor one bottle of wine or one jug of cider. To package them I wrapped them in parchment paper and tied them closed with some cute bakers twine. Once made, these packets will keep for a couple of months. Ingredients: 1/2 orange, sliced into thin rounds (dont use the ends) 4 thin slices of fresh ginger 2 cinnamon sticks 5 black peppercorns 5 allspice berries 2 star anise pods 3 cloves Directions: Preheat your oven to 175°. Place a wire cooling rack on a rimmed baking sheet and place the orange slices on the rack in a single layer. Dry these oranges in the upper or lower third of the oven for approximately 4 hours, flipping the oranges and rotating the pan halfway through. You know theyre done when the inside of the orange is a little sticky and the peel is nice and crisp. Once done, let them cool. Once the oranges are in the oven, thinly slice the ginger. Place the ginger on another rack on top of a rimmed baking sheet and let them dry in the oven (with the oranges) for approximately 3 hours until the slices are nice and dry. Halfway through the cooking process flip the ginger and rotate the pan. Let the ginger cool. When the oranges & the ginger cool, package ‘em up with the spices!
