Tip of the Day - All food establishments that do not have an automatic dishwasher must have a three compartment sink. Before you wash the equipment and utensils, rinse, scrape or soak all items. Then, in the first compartment of the sink, wash the items in a detergent solution. In the second compartment, rinse the items in clean water. Finally, in the third compartment, sanitize the washed items by immersing them in hot water or chemical sanitizer for at least 30 seconds.
