To keep health in mind, we NEED to keep the health of the soil in mind. This is an excerpt from my nutrition course (its basic information but cant be stressed enough!!!): Unlike vitamins, our bodies are not able to produce minerals and must obtain them all from the diet. There is growing concern that our food contains fewer minerals than even just 50 years ago because farming methods of the past several decades do not enrich the soils, but essentially strip the soils of rich nutrients through single crops grown on the same land year after year. This method of monocrop farming requires more and more fertilizer that are themselves devoid of diversity, and consist mostly of nitrogen, phosphorus and potassium. Farmers of the past knew the importance of crop rotation to ensure the soils were not depleted of specific minerals from one year to the next. Organic and Permaculture methods of farming are bringing back these wise practices and re-enriching soils. It has been proven that organic produce contains 5% to 15% more minerals than the same food grown using monocropping and synthetic fertilizer farming methods.
