Toasted Marshmallow Now Im not the best cook but one thing I can do is make Marshmallow so I thought I would share my easy recipe. 2 cups of castor sugar 1/2 cup warm water 1/2 cup of cold water 2 envelopes of gelatine (or 2 tbs) Vanilla essence (splash) 1. Using a small Mixmaster bowl; beat the sugar and warm water on about speed 7 for 7 minutes. 2. Soak gelatine in cold water (very stiff), dissolve over boiling water until liquified. (I cheat and dont let it cool) 3. Add gelatine mixture gradually to the syrup on speed 3. 4. Add vanilla and continue mixing until mixture leaves a trail. Pour into greased baking tray (oil spray) and place in refrigerator until set. Cut into squares and roll in toasted coconut. NB: The above mixture fill 2 x Easter Bunny moulds and 2 x tiny ones for those who love to do Easter treats. Enjoy!!! MS
