Today was lunch with a purpose. I was talking to a friend of mine late last night and she gave me inspiration. She had surgery recently, and the list of foods she can eat is really limited. She said she eats a lot of grilled chicken. I asked if she could have baked chicken and BBQ sauce. She was telling me how much she loved the bread I posted on my personal page yesterday, and how she cant have bread yet. So, I wanted to make something she could eat. Last week I was watching Rachael Ray. She was making chilie burgers with homemade BBQ sauce. The sauce looked very interesting and I made a note to try it sometime. Today was the day. I followed the instructions exactly, but made just half a batch. It made enough to cover at least 6 drumsticks. I freeze 2 chicken legs in perfect portion bags inside a freezer ziploc. Makes just enough for me. So, I put the frozen chicken legs (still stuck together) in a pie plate. Baked in preheated 375 degree oven. Took them out, separated them and rolled them good in the sauce (Ill post the recipe with the sauce recipe in it down below. I didnt make anything from it but the sauce.) I left just enough sauce in the pan and set the rest aside so it didnt get contaminated. So I could use it as a sauce on the finished chicken. Rolled partially baked chicken in the sauce. Put another dollop on the top, and finished cooking for about 25 minutes. Until there is no pink and juices are clear. I cooked it with the skin on for a little flavor and to keep the moisture in. After it was done, I discarded skin and dipped chicken in a little bit of extra sauce.
