Today, we say goodbye to our much loved head chef of 6 and a half years. Gil’s been here since 2 weeks after I took over the Black Lion, in march 2008, and has been a massive part in making this pub one of the best and busiest in Brighton. Having known him for 10 years, I will miss working with him every day, as will all of the Black Lion team. Six and a half years in the same (albeit expanding) four walls, though, are probably enough for anyone, not to mention a chef in a busy kitchen. He initially said he’d be here for two years max, so we had a good run. Gil is going to take some time off, do some travelling and then throw himself into some new projects and I wish him every success and look forward to working with him again in the future. I just wanted to place on record my gratitude and respect for a very talented French bloke who has helped keep me sane and laughing for a good few years. He’s not on Facebook, though, so he’ll never know I’ve written this…I might tell him in person instead. In the meantime, all is very far from lost. I am very excited to welcome our new Head Chef, Jordan Webb. Jordan has a very impressive track record, creating incredible food for more than 20 years. His CV spans an array of fine dining including being chef to the stars at Pinewood Studios. He’s now been working with Gil for the last 2 weeks and we have all been blown away with the quality of the food he produces and his ability to coach our young team. There is no doubt that we’ve netted one of the best chefs in Brighton, and I’m very much looking forward to launching our new Autumn & Winter menu over the course of the next two weeks. So, here’s to the next 6 years, a massive thank you to Gildas Beurel and a warm welcome to Jordan Webb.
