Vegetarian Paella 4tbsp Olive oil 1 Large onion, chopped 2 cloves garlic, crushed 1/2 tsp paprika 350g long grain brown rice 1150mls vegetable stock 175ml white wine 1 x 400g tin chopped tomatoes & juice 1tbsp tomato puree 1/2 tsp tarragon 1tsp basil 1tsp oregano 1 red pepper, chopped 1 green pepper, chopped 3 sticks celery, finely chopped 225g mushrooms, sliced 50g mange tout, halved, topped & tailed 100g frozen peas 50g cashew nut pieces Salt/pepper METHOD Heat oil and fry onion and garlic for 2-3 minutes. Add paprika & rice - continue to cook for a couple more minutes. Add stock, wine, tomatoes, tomato puree & herbs and simmer for 10-15 minutes. Add peppers, celery, mushrooms and mange tout & cook for 30 minutes, until rice is cooked. Add peas & cashew nuts, season and serve with lemon wedges.
