Veggie & “Beyond Chicken” Stir Fry! foodloversrecipes Ingredients 1 onion chopped 1 inch piece of ginger finely chopped 4 cloves of garlic chopped 1/2 cup frozen (or fresh or canned) corn 1 bunch asparagus chopped into bite size pieces 1 red bell pepper also chopped into bite size pieces 1 pack Lightly Seasoned Chicken Strips or use two cooked chicken breasts Juice of half a lemon olive oil 1/2 teaspoon chili powder (optional) salt and pepper to taste Instructions Saute onion, garlic and ginger in olive oil in a pan on a low-medium flame for about 15 minutes Add the corn, asparagus, red bell pepper, Lightly Seasoned Chicken Strips, chili powder and lemon and salt and pepper and gently stir till combined - let all ingredients mingle over a low-medium flame for another 10 minutes or so and voila - dinner is ready!
