Vintage Cookbook Corner: Celebrity Choice Cookbook I found this book in a second hand shop a few weeks ago and Ive been itching to have a proper look through it since. Its a book that produced in aid of The Education and Research Centre, St. Vincents Hospital. It was published in 1991 (apparently something has to be at least 20 years old to be considered vintage so disgustingly, 1991 is vintage now. Eugh) so some of the celebrities might not be as well known now. Ive had a good google of all of them and its been enlightening to say the least! Did you know that Finola Bruton makes a lovely sauce for lamb and Kristi Spring does a good marinated beef with mangetout. I can imagine the political dinner party wars of the early 90s were won and lost on such dishes. Now, onto the juicy stuff. TV newsreader Eileen Dunne is fond of a drop as her speciality is Brandy Soused Satumas with Almond Cream. Her fellow newsreader Don Cockburn is hilarious by all accounts. His trout dish is called Stuffed Telefish Eireannach. Ha. I would have assumed that Richard Harris would have submitted a boozier recipe but I suppose Corned Beef and Cabbage might make a good hangover cure! A savoury cheesecake from Elaine Murphy Calor Housewife 91 sounds utterly vom inducing but it must have been appreciated by the judges, whoever they were. I remember well the Quinnsworth/Superquinn battle of the early 90s and the difference between the two is exemplified by the recipes submitted by their respective owners. Maurice Pratt offers something quite vague called Chicken and Broccoli Dish and Fancypants Fergal Quinn suggested Medalions of Veal in Avocado Sauce. Notions, Fergal. Notions. But getting to the baking and desserts section. My old friend Marty Whelan likes Cardinal Pear and I know I really havent lived until Ive tasted Brian Lenihans Strawberry Ring. What I really wanted to make though was Bibi Baskins Carrot Cake. Firstly coz its Bibi Baskin and secondly coz cake. Bibi Baskins Carrot Cake (slightly adapted to make it nut free) Ingredients: 8oz Brown sugar 10 oz Wholemeal flour 8oz Grated carrot 3oz sultanas (in place of 4oz chopped walnuts) 1tsp cinnamon 2tsp nutmeg 1 tsp bread soda 2 tsp baking powder 4 eggs 8 floz oil (Id use about 1/2 this next time) Juice of 2 oranges Icing: 3oz margarine 10oz icing sugar rind and juice of 1 orange 1 tbsp milk (I used soya) Chopped walnuts to decorate (I left these out) Method 1. Mix all the dry ingredients well together. 2. Add the beaten egg, oil and juice and mix well again. Very lots of mixing in this recipe Bibi. 3. Place the mixture in a greased 2lb loaf tin (I used 20cm round springform tin coz I never know what size a 2lb loaf tin is. Is it one youd use 2lbs of flour to make or is the finished loaf 2lbs?? I just dont know!) and bake in a 180c oven for about 1 hour. 4. Put the cake on a wire rack to cool and make the icing. 5. Melt the margarine, add the sugar orange and milk. Spread it over the cooled cake and sprinkle on your nuts. If you have any. So. The icing. No Bibi, I wouldnt do that again. It was too watery and as one of my trusted testers said theres an aftertaste, not unpleasant, but odd. Id do an orange buttercream using vegan butter or a cream cheese icing if dairy wasnt an issue. The cake itself however was amazing, Bibi. Really moist and the spices were just right. I was worried about putting so much nutmeg in it as I heard that Eating four to eight teaspoons of ground nutmeg causes mild hallucinations, warmth in the limbs ... But I brought Bibi Baskins Carrot Cake into work and nobody has reported any ill-effects yet. Small Himself laid into a piece after dinner this evening and again was complimentary if a bit insincere... It was amaaaazing, the best cake Ive ever eaten. Hmm. Small Herself hasnt had any yet nor has Big Himself, hes too full after a pulled pork dinner. The work folk liked it. Well they told me they did anyway. So, this is #dairyfree and #nutfree.
