WHY SHOULD WE WORRY ABOUT VEGETABLE OILS? Many vegetable oils are marketed as being cholesterol free and .... bla bla.....some even have the Heart tick..... sorry, but its all marketing bulldust! Here are the facts: Due to the refining process and also chemical reactions (usually with the polyunsaturated component) - ALL VEGETABLE OILS contain oxidised fats. Oxidised fats are the ones that cause damage to your arteries that lead to heart disease. Catherine Shanahan, who is an MD, authour and nutrition expert, calls the fats in vegetable oils MegaTrans, because they are similar in chemistry to trans fats, but even WORSE. The refining process in itself results in the creation of FREE Radicals. And it is these Free radicals that go on to create the mutant fats. Mega Trans are great for causing damage to your cell membranes & chromosomes, and create massive inflammation in your body. And as a result of what we have learned from a variety of studies the risk of damage is not related to just long term consumption from eating vegetable oils daily. There are studies that show immediate dysfunction in your arteries after eating fried food, we refer to this as endothelial dysfunction. In Deep Nutrition a book by Catherine Shanahan, MD, she cites a study from our fair shores of New Zealand that showed people who ate french fries from a restaurant fryer displayed immediate harm to the endothelial function of their arteries, it went from a normal 7% dilation before eating the french fries to almost NO dilation at all (only 1%) AFTER eating the french fries. This is one thing that can cause a heart attack. And how about this, Dr Shanahan did a survey of hundreds of patients that were admitted to the hospital as a result of a heart attack, guess what she discovered? EVERY single patient had consumed foods made with vegetable oils with their last meal before the heart attack...Coincidence. Maybe we just need to wake up and understand that pure and simple is best. So maybe that side of salad or vegetables of the day would be a better choice than the side of fries. GB
