We just released a new series of Wild Sweets® Chocolate Constructivism version of the classic French treat mendiants — chocolate loosely shaped and topped with an assortment of dried fruits and nuts. Our version is evenly constructed in its shape and thickness so that we can standardize the ratio of toppings to chocolate in each one. The base is made of our high % deep milk Single Origin Camino Verde Ecuador chocolate and topped with savoury inspired sweet ingredients including novel nuts poached, roasted or otherwise crafted for different taste and texture, cubes of spiced pâte de fruit rolled in our own extremely fragrant encapsulated sugar crystals, grains or fruits such as olives candied and Vacuum Dried turning them into crispy puffed candies. And last but not least, we cleverly process various fresh cheeses and turn them into crumbles for unique flavours all resulting in truly novel new-classic treats!
