We often get the question of what to do with the green tops of the carrots and thought it would be good to share a few things: 1. Snip the greens off of the carrots when you are storing them in the refrigerator. The greens tend to pull the moisture out of the carrots and if you keep them intact you might find yourself with limp carrots. 2. If you forgot to snip the greens and now have limp carrots - no problem. Just throw them into some cold water and they will rehydrate just fine. 3. Can you eat carrot greens? The answer is yes but keep in mind that some people can be allergic to the tops. How to tell - one hint is to lightly brush the greens across your inner arm - if you get a rash, that may be an indication of an allergy. But no rash is no guarantee....! And if you are still unsure, I guess better safe than sorry. 4. What can you do with the tops? The most common is to dry them as you would an herb and then use it in cooking. People equate the dried greens to parsley. 5. NPRs All Things Considered did a story on making carrot greens pesto. We have never made this ourselves but it looks interesting.
