Welcome to Trishs dishes. thanksgiving is my favorite time of year not just for the food but for the memories it cultivates and two of my favorites are my mothers giblet stuffing and my grandma Roses crumbly apple pie (see pics already posted). My grandmothers apple pie was the best, and I still make it to this day just like she did. you could walk into to her house on any given Sunday and know the minute you opened the door if she was baking cummy apple pie(I couldnt say crumbly when I was little, and I still call crummy to this day). One of the secret to this pie is a brown paper bag from any grocery store. Crust • 1 1/4 cups all purpose flour • 1/2 cup powdered sugar • 1 teaspoon salt • 1/4 cup (1 stick) chilled butter, cut into pieces • 1/4 cup (1 stick) chilled shortening, cut into pieces • 3 tablespoons sour cream Filling • 6 medium apples peeled and sliced • 1/2 cup sugar • 2 tablespoons flour • 1/2 teaspoons nutmeg (gram used fresh) • 1/2 teaspoons cinnamon • 2 tablespoons lemon juice Topping • 1/2 cup sugar • 1/2 cup flour • 1stick butter slightly softened preheat oven to; 425 for conventional oven and 400 for convection To make crust, put cut up butter and shortening in a bowl and place in freezer for 10 minutes, in the mean time mix flour, salt and powdered sugar in large bowl with wire whisk to blend, add butter and shortening using a fork or pastry blend, blend until it resembles course meal, add sour cream and form a smooth ball. On a well floured linen towel or pastry board roll out dough to fit a 9 or 10 inch pie pan. Put into pie dis and using scissor or paring knife trim dough leaving one inch over edge for crimping. Add apples to shell. Combine sugar, flour and spices and pour over apples. Sprinkle lemon juice over all. Mix topping ingredients together and crumble over top of pie. Place pie in brown paper bag and fold open edge of bag and staple closed. bake for 1 hour. Allow pie to set for 5 minutes before opening bag. Serve warm with vanilla bean ice cream or room temperature. If you knew my grandma Rose I hope you smile when you make this recipe and if you did not know her smile anyway because she will be smiling down at you. Moms Giblet Stuffing. On Thanksgiving morning we would get up and could smell my moms stuffing along with everything else she had going on. we would come down stairs and the television was on with the Macys Day Parade, my mom would have hot chocolate and a foil container of stuffing ready for us to eat while watching the parade. Now I have coffee and stuffing. She always prepared her stuffing the night before to season and I believe thats what makes it so good. This will stuff a 12lb pound turkey. Giblets and neck from turkey 1 bag Pepperidge Farm croutons (mom said they were the best) 2 bay leaf 5 cloves all spice or 2 teaspoons ground 1 teaspoon each salt and pepper 1 medium onion diced 2 stalks celery diced 2 eggs beaten 1 stick butter melted 2 tablespoons butter not melted aluminum foil In a small pot put giblets,turkey neck, 1/2 cup onion, 1/2 cup celery, allspice, bay leave and salt and pepper. Cover with water and cook on medium heat for 1 hour. Strain liquid from giblets into a separate bowl and allow to cool. Cool giblets and neck, then pull any meat from neck you can, and dice up rest of giblets, discard the celery, onion and spices. While giblets are cooling melt 2 tablespoons butter in saute pan and saute onions and celery until onion is transparent. In large bowl (I still have the orange and yellow ones my mom used to use) mix croutons, cooked onion, celery, giblet and neck meat. In a separate bowl whisk melted butter with eggs and half the giblet broth pour over crouton mix and combined until croutons are soft not mushy. Add more broth if needed a little at a time. season with extra salt and pepper a dash and a pinch as my mom would say. Thanks giving morning. Stuff your turkey for baking (I will share my turkey recipe next week), Tear a few nice size pieces of foil and place stuffing in the middle, crate a fun design and bake in preheated oven for 20-25 minutes or until stuffing is cooked and registers 165 on thermometer. Make some hot chocolate , tea or coffee, turn on the parade and enjoy. This is what I will be doing and thinking of you mom.
