Well decided to go with the chive noodles, and glad I did, was going to do gnocchi but decided against it at the last minute. The noodles are #5 noodles so actually fairly thicker then a standard No 2 , and I also made some bow tie and type of dumpling. I find with a slightly thicker noodle it of course gives it slightly more chew. It is seriously slap yo momma good for being so simple really to make. For stuff like this I make a richer noodle. more egg and extra egg yolk, and I knead as little as possible. the noodles are sort of hard to work with because they really want to fall apart when initially making them. I allow them to dry only like a hour, and when I initially mix them I let the dough sit wrapped in plastic wrap to hydrate properly. Today I did use my pasta roller (Hence the No 5 noodle setting.) Anyways, for chicken,water,egg,flour,salt, milk (Yes I use milk in these noodles, as well as a bit in the broth), turmeric, thyme and chives I cut out of garden by the handful, its about as good as it gets, imo. and salt and pepper of course.
