Well today I made spit-roasted honey lime huli huli chicken on the grill with the new rotisserie accessory for the grill. It was amazingly tasty. 1 chicken 3 1/2 to 4 lbs 1 clove garlic thinly sliced crosswise 1 bunch of thyme Coarse salt 1 tablespoon dark (Asian) sesame oil For the glaze 1/2 cup honey 1/2 cup soy sauce 1/2 cup lime juice 2 tablespoons light brown sugar 2 tablespoons Thai chile sauce 1 clove garlic gently crushed 1/2 teaspoon ground black pepper Season inside chicken with salt and pepper. Loosen chicken skin frowm body by taking your index finger and tunnel by the neck cavity. Gently work your hand in until you have loosened the skin from the breast and thighs. Insert 1/2 garlic slices and six sprigs of thyme under the skin. Put rest of garlic and 6 spigs of thyme in the cavity. Brush outside with sesame oil and season with salt and pepper. The glaze Put honey, soy lime juice, brown sugar, garlic, chili sauce, pepper in a pot over medium high heatband bring to simmer for about 5 minutes. Put chicken on rotisserie spit. Get grill to medium-high. Put spit into rotisserie mechanism. Cook for 1 1/4 to 1 1/2 hours. During last ten minutes baste with glaze. Enjoy and thank you Steven Raichlen for the receipe
