Were puttin all that awesome organic (and some heirloom) summer squash to good use in a delicious soup with pesto and fresh basil. Add the squash in stages as it cooks down until your pot is completely full, salt it and cover. Let the squash stew with onion & garlic....puree with pesto and a handful of fresh basil with each batch. Well definitely be making this tasty number throughout the summer season.....give it a try! Garlic in our kitchen these days is grown at Colgan Farms in Simsbury, CT. Heres a pic of some super fresh bulbs curing in the barn. Lots of great foraging opportunities out there this time of the year, too!
