What to do with that left over chicken?? How about making a healthy yummy chicken salad: In my case I didnt have left over chicken, I made chicken for this salad ;) Prep time 10 minutes 4 servings About 200 calories per serving 4 chicken thighs boneless,skinless, seasoned, prepaired without oil (chicken thighs will release a lot of water and fat once you cover the pan with a lid) - shred chicken - add 1/2 chopped onion - 1 stalk of celery - add 1 cup of plain 0% Greek yogurt (Fage) - add 1 cup sliced grapes - 1/2 cup sliced apple - few squeezes of lemon juice - salt and pepper to taste - garlic powder to taste This salad is delicious, quick, healthy and packed with nutrients. Enjoy!
