What to put in the kids lunchboxes?? My 17 year old takes a salad nearly every day. I always include some protein (FR bacon, fish, FR chicken) loads of vegetables (cucumber, peppers, tomatos, avacado) usually some good feta, and a dressing made with olive oil (good fat) and vinegar or lemon juice. If he doesnt take a salad I give him some of last nights left overs in a thermos. Sometimes he takes curry or bolognaise (no pasta!) and sometimes he takes soup. Soup is great in winter and I think the other kids at school are a little envious! I know some of them have started taking salads now too, so you can see that there is a ripple effect and if kids see other kids eating well, it makes them think about what theyre eating themselves. Along with that he usually takes a couple of boiled eggs, some nuts and a couple of pieces of fruit. He may well buy extra at the tuckshop on occassion, but at least he heads of with plenty of really good healthy food to keep him energised and able to concentrate for the day. I know at primary schools there is a lot of regulation about what the children can and cant take to school. The food allergy situation is crazy (Ill save that for another post) which makes it tricky to send all sorts of food to school, whether your child has an allergy or not. And hey, I get that (one of my sons has an allergy to macadamia nuts!) the whole anaphylaxis thing is pretty scary, but it does seem somewhat ironical to me that you can send toxic food (biscuits laced with sugar,vegetable oil, and hydroganted fats) tetra fruit juices (25.8 grams of sugar in 250mls) and you cant send an egg! Anyway that doesnt solve the problem of what to send in the school lunchbox so here is a few ideas. ( It takes a little effort and forward planning of course, because you cant just grab the bag of tiny teddies and throw them in) You can always cook in bulk and them have them in the freezer ready to go - chopped veggies and dip (can be a little messy) - some chopped full fat cheese with cherry tomatos - cooked little chipolata sausages (these cook really quickly in the morning while your having breakfast) - chopped fresh fruit - marinated chicken wings - small italian meatballs - oven baked sweet poato fries (recipe below) - home made crackers (recipe below) Sweet Potato Fries 2 large sweet potatos 2 tablespoons melted coconut oil sea salt pepper a little smoked paprika Julienne sweet potato and toss with other ingredients. Bake on oven tray lined with baking paper for 30 mins (180 degrees) turn occasionaly. They are good hot or cold (with dip) Crackers 2 cups of almond flour (remember this is a nut) 1 teaspoon of sea salt chopped herbs of your choice (I like rosemary) 1 tablespoon of olive oil 2 tablespoon of water Mix together. Roll flat between two pieces of baking paper. Place on baking tray. Cut biscuits to your desired size. Cook 180 degrees for about 7 - 10 minutes or until golden brown. Allow to cool completely then store in airtight container. I hope this was helpful. Ill keep an eye out for other lunchbox recipes and post them when I can.....happy eating...P
