Whats for Dinner Wednesday??? How about One Pot Farmers Market Pasta! Our Family devoured this the other night and Ill be making again tonight! This Recipe is so Versatile, Easy, Quick, Delicious and Nutritious! Best of all, most of these ingredients can be purchased in our Farm Market and you can substitute any of the veggies. I used purple cauliflower and broccoli just picked from the fields and it was amazing! 12 oz. spaghetti 1 medium red onion, peeled, halved, and sliced 1 small eggplant, halved lengthwise and sliced several stalks asparagus, cut in 2 inch pieces 2 cups chopped Tomato 1 colorful pepper, chopped 2 cloves garlic, minced 2 handfuls baby greens 1-1/2 tsp salt and lots of cracked pepper 1/2 tsp red pepper flakes 1 cup dry white wine 3 1/2 cups water 1 tbs white wine 1 cup shredded parmesan cheese 1/2 cup chopped fresh basil Place all ingredients in large pot expect water, wine, and cheese. Once ingredients are in the pot add water and wine. If pasta doesnt fit completely into the pot, nudge it down into the water as it softens. Cover the pot while it comes to a boil then uncover and boil 7-9minutes. Stir frequently so pasta doesnt stick to the pot. Toss the pasta w/cheese and garnish w/fresh basil. Serve w/crusty bread and ENJOY ;)
