Whats the best thing about Switzerland? Hard to say, but their flag is a huge plus. You know what, I like venison. Isnt it tasty? The best thing about venison is that it comes from Bambis Mum. Which is yet another example of Disney showing us that we really shouldnt waste anything. If only we could use Bambis tears as seasoning. Speaking of Mums; when I was down home visiting mine a week or two back, it was very cold. So one night we decided to make a rich venison casserole with dark chocolate. It was warm, so much so that when I ran outside naked - the steam from my body was so thick I accidentally permed the hair of the neighbors. Big Dave was most displeased. Casserole: 800g Venison 10g Unsalted Butter Olive Oil Seasoned Flour 1Tbsp Garlic 1 Large Onion, diced 1 Large Carrot, diced 1 Cup Red Wine 150ml Chicken Stock 150ml Beef Stock 2 Oranges, cut into large chunks Bay Leaves Large sprig of Thyme 20g Dark Chocolate Juice of 1 Lemon How to make stuff: 1. Preheat the oven to 160c. Trim the meat and cut into 3cm cubes. 2. Put oil and butter in large pan. Roll venison cubes in seasoned flour, place them in the pan in batches and brown all over. 3. Transfer meat to a large casserole dish as each batch is done. 4. Place the garlic, carrot and onion in the pan, as onion becomes translucent, sprinkle a little of the flour in the pan and continue cooking till browned. 5. Pour red wine into pan and simmer for a few minutes while stirring continually. Pour in the stock, orange chunks, thyme and bay leaves. 6. Bring to the boil and then pour over meat in the casserole dish. Top up with water if meat is not covered, stir thoroughly. 7. Put casserole dish on stove and bring to boil, skimming off any grease that surfaces (if you cant put your casserole dish on your stove, youre going to have to do yourself some thinking). 8. Put lid on dish, and transfer to the oven. Cook for two hours, and then leave to cool for 20 minutes. 9. Drain the casserole through a colander placed over a bowl. Lift out the pieces of meat, and return them to the casserole dish along with the liquid from the bowl. 10. Strain the vegetables from the colander through a sieve and into bowl, use a flexible spatula to press down hard on the vegetables and orange to extract all the juice, then discard the leftovers, add the extracted liquid to the casserole dish. 11. Place the dish back on the stove and bring to gentle simmer. 12. Finely grate chocolate and stir through quickly. 13. Add a decent whack of your lemon juice, a touch of salt. 14. Either stir-through or sprinkle on top the gremolata that I havent mentioned until now. 15. Serve with whatever you want, mash, polenta, whatever. Should get 4-5 decent servings outta that puppy. Best consumed with 3 bottles of good red wine, or enough so your face is all like: o_O
