When your only lunch for the day is Chicken salad, after browsing the internet and realizing there is at least an average of 2 ingredients missing in your kitchen to try out any of those, you are but compelled to invent a new one with whatever you have. Any mind you, its your only meal and its got to be yummyy. And yipeeee this one sure as hell was! ;-) (Pssst i did a little happy dance too when i tasted it :P ) Low Fat Chicken Salad 2 cups Iceberg Lettuce (can try other types too) 1 tbsp Chopped toasted Walnuts or almond bits (optional...adds a lovely crunch) 1 cooked Chicken mix (recipe below) 1 part Curd Dressing (Recipe below) Cooked part- ----------------- 1 piece Chicken Breast cut is 1/2 or 1 inch pieces 10 cloves Garlic peeled and whole 2 Onions sliced thick lengthwise (or use whole peeled shallots) 1 Carrot peeled and sliced thick 1 tbsp Olive Oil 1/2 tsp Pepper powder Salt to taste Mix all the above and spread on a baking tray and bake in preheated over at 200 degree C for 20 minutes. Mix once in between after about 10 mins. (this itself tastes so yum...couldnt resist popping a few pieces in my mouth...try it i say! hehehehe) Dressing ------------ 2 tbsp Low Fat Curd (thick) 1/2 tsp Mustard powder (use mustard sauce if you have it. Tastes better. Can also use Kasundi...tastes awesome) 2 pinches Pepper powder Salt as required Mix all the above. Assembling- --------------- Toss together the Lettuce, walnuts, chicken mix and dressing. Adjust salt. Chill and serve. :)
