Who doesnt eat breaky or ends up grabbing some white, processed, soul sucking, quick & easy so and so because they simply dont have time? I hear you, Im with you babe and I feel your pain so here is my quick and easy go to breaky. ATM Im all about the bulk cooking, cook once eat 70 times (husband & kids are sooooo not happy with this, me? Tickled pink!) So, instead of cooking scrambled eggs once on the weekend how about you chop up a few extra ingredients, whisk a couple more eggs and prepare a whole weeks worth of quick, easy, protein packed, nutrient dense breakies (or lunches for that matter) that you would swear you got from a restaurant!! 1. Chop up 4-8 cups of veggies, any veggies, you name it, wack it in, Broccoli Cauli Kale Zucchini Sweet potato Leek Mushrooms Chop with gusto, no need for fairy pants here just hack away!! They just want to be in small enough pieces so they cook in a reasonably short amount if time. 2. Take a BIG dob of butter or my fav ghee and heat it in a big oven proof fying pan. If you like things like herbs, garlic or ginger put them in at this point too. Rosemary, thyme or fresh parsley work great. 3. Fry this off then add between 4-8 beaten eggs (depending on the size of your pan), a dash of cream or coconut milk, S & P. 4. Let this cook on low for 10mins then wack it under the grill for another 10, once its not wobbly anymore, its done. 5. Cut into 4-8 slices, keeping it in the fridge allllllll week!! 6. When the mad morning rush is on, pull out a pre sliced piece of your beautiful egg pie, top with spinach, kale or salad greens, avo, a BIG dollop of homemade mayo and a sprinkling of apple cider vinegar, your home baby!!! ENJOY!!
