Winters speciality .... GAJAR KA HALWA ... ----------------------- For Indians its a must for all families .. Its everyones favorite.. As winter starts the first sweet which is in demand is.. Winters r here when we getting gajar halwa... I know it lil late but here is my way of making Gajar Ka halwa ... U need ING :- -------------- • 3 1/2 pound carrots • 3Lt milk • 1cup sugar ( I had taken less as I like very less sweet) u can adjust accordingly • 6 tbsp pure ghee • Dry fruits of ur choice ( I had taken almonds raisins and cashews) • 2-3 black cardamoms METHOD :- ----------- 1) peel the carrots and put them in cold water for 5 min and then grade all the carrots. This will help the color of the carrots remain bright. 2) Take a big pan or wok/Kadai and put 4 tbsp ghee in it keep rest of the 2 tbsp ghee separately for later use . 3) Spread all over the Kadai or pan or wok . This will help ur milk to not stick to the bottom of the pan and makes it easy to prepare ur HALWA 4) Now put full cream milk in it and give it a boil . 5) Just after a boil add ur grated carrots in it and simmer the flame of the gas stir occasionally every 15-20min . 6) See the consistency in the pics above. 7) When u see that it has reduced and u can hardly see the liquidly milk all over then add sugar in it . And mix it nicely. 8) After this u have to stand by Side of the halwa and increase the flame to high and keep folding it ... DONT STIRR JUST FOLD .. 9) U will see that it will start leaving ghee now .. If u see that its leaving water dont get afraid as when u add sugar to any fruit or veg its there tendency to leave water it will just evaporate when it starts get cooked well .. 10) When u see that there is no water content in it then add remaining 2table spoon ghee in it and mix nicely . 11) U will not see the ghee when u mix it and will the need of putting more .. But pls dont add more as when it get cooked nicely it automatically starts leaving the ghee . 12) Simmer the flame of ur gas n again start folding it after 2-3min.. For 15 more min. 13) Mean while cut ur dry fruits and soak raisins in warm water for 5min . And then drain the whole water and pet dry it. 14) After 25 min switch off the gas and add the dry fruits and black cardamom powder in it and mix it nicely. Ur Gajar Ka halwa is ready to eat ... Decorate it with dry fruits ... U can have it hot and cold both ways ... TIPS:- ------ try to make ur halwa in non stick pan . It will help u not to stand next to it and u can leave it for 15-20 min on sum flame with out any tension . To make ur raisins more soft wash them and soak them before start making halwa . To get the black cardamom PWD crush it with the help of rolling pin/belan and make the pwd of the seeds . This is a key Ing dont forget to put as it gives a divine aroma to halwa u will love it Dont replace black cardamom with green cardamom . Either u put black or dont put any.
