Wish me luck, please, everybody! I just started my special no starch/no gluten mixture a-bakin in my bread machine. My first two attempts at low-GL bread were wild successes. If what I wanted was fine building material. In the form of charred, malodorous bricks. My first thought was to blame the recipe; the second was to blame the long periods of disuse I put the Panasonic machine through. Because of course they were. But both cases proved to be what your helpful IT people call ID-Ten-T situations. Or, more benignly, user error. In one case I forgot to add water (who knew such a tiny oversight could produce such terrible results?) In the other I neglected to hook up the little agitator thingie at the bottom. (The good news was, it wasnt as badly charred. Because, you know. Water.) Anyway, well see what well see. Be sure to check back in about five hours to see whether Im crowing about (actual) success, or bemoaning another comic-opera waste of pricey coconut and flax seed flour!
